Blueberries are one the most healthy fruits you can eat. Packed with antioxidants and vitamin C, those little blue gems pack a powerful punch.
This dessert recipe takes blueberries one step beyond muffins, pancakes and coffee cake.
INGREDIENTS
1 pkg of pie crust dough (You can even use crescent rolls or even biscuits in place of the pie crust.)
4 oz cream cheese, softened
2T sugar
1/2 - 1 cup blueberries
INSTRUCTIONS
Unroll the pie crust and cut into four squares. Cream together the cream cheese and sugar. Spread onto dough, top with blueberries. Pull up corners and press down to seal. (The dough will not completely cover the cream cheese mixture.)
Bake at 375 degrees for 10 - 15 minutes or until brown on top.
This is a forgiving recipe - a little more or a little less cream cheese or sugar or berries won't hurt. You can even use crescent rolls or even biscuits in place of the pie crust.
